If you're getting smoke your remains should be black. Aside from the big taste difference- harsh smoke vs. mild vapor- exhaled vapor will dissipate quickly, while smoke will linger. If your remains are brown you're getting vapor, not smoke.

Not possible. Even if your temp is too high, you get vapor before smoke.
