if your plant starts to turn purple, will it start in the base stem and work up the stems and into the leaves or does the leaves start to turn on their own?

Strain dependent, if the purple is genetic and not a sign of deficiency. You'll see the purple coming on in earnest when you are a few weeks into withholding N, or late flower. The small fans around the base of each bud will often show the most vivid fall foliage colors.
