Can the soy that margarine is made from do the same as the butter for a healthier alternative?

THC is FAT soluble...if it has a high fat content(especially saturated fat), then you can extract THC from the weed in to it...just have to cook it properly etc.

It will work if it as a high fat content, if it doesn't it's a total waste of time. unfortunately you can't really go totally healthy when consuming cannabis for that reason.
